Types of Matcha Powder

Organic Matcha
Organic matcha is made by grinding tea leaves that have been cultivated organically. The first stage is cultivation. Organic cultivation refers to a method of farming that does not use chemical fertilizers or synthetically-produced pesticides. The second stage is manufacturing. In this process, it is crucial to avoid contamination with conventionally-grown tea. Ideally, a separate organic-specific production line is needed.

Ceremonial Matcha
Ceremonial matcha refers to high-quality matcha that embodies the true color, aroma, and flavor of matcha as used in Japanese tea ceremonies. Hence, it is the optimal choice for drinking. Especially when drinking matcha dissolved directly in water or hot water, without combining it with other ingredients like milk, the quality of the matcha can be directly perceived. Therefore, choosing ceremonial matcha would be more desirable.

Culinary Matcha
Culinary grade matcha is a slightly lower grade of matcha than ceremonial grade matcha. It is usually less expensive, and is designed to be added to lattes, smoothies, baked goods, and other recipes. Culinary grade matcha tends to have a bolder, less nuanced flavor designed to stand up to other ingredients.

Production Processes

Storage Requirements for Matcha Powder
Similar to other green teas matcha is adversely affected by heat, humidity, light, air and odor that transfer from other substances. Fresh high-quality matcha has a vibrant green colour, a heady aroma, and balanced flavour. However, when exposed to the above elements, matcha takes on a dull olive hue and the taste disintegrates. It is therefore important to store matcha properly.
One of the best ways of preserving the quality of matcha is to refrigerate it whether the container is opened or not. Once opened, our pull-top canned Matcha should be refrigerated and should be consumed ideally as soon as possible. If frozen in an unopened can, matcha retain its freshness for several months. To prevent Matcha that was stored in the refrigerator or freezer from clumping when exposed to air, it should be allowed to warm up to room temperature before the package is opened.
